Our group has found it useful to have a representation on the table for each of our horses and pack animals as well as for the characters. This clearly shows who is on their horse and who has dismounted, as well as obstacles to line of sight (or means for concealment). When a horse is carried off or killed, the number on each horse make it clear which horse it was so we know who is now having to walk and what items were in the saddlebags that were lost.

You could just cut them out and use them as it. But I would suggest having them laminated to make them more durable. You might even attach a heavy piece (or two) of cardstock behind them before having them laminated to give them more height and make them easier to pick up.
